Recipe - Chocolate No Bake Cookies


This recipe is from my mom's recipe box.  I think it's just a standard recipe for no bake cookies, but I don't really know for sure because I've never tried another recipe.  These are too good to mess with.

Chocolate No Bake Cookies
2 cups sugar
1/2 cup milk
1/4 lb. butter (1 stick)
4 tablespoons cocoa
3 cups oatmeal
1/4 cup nuts (optional)
2 teaspoons vanilla
1/2 cup peanut butter




1.  Assemble ingredients.


Melt the butter on low heat in a pan.  I recommend a pan with tall sides because this will splatter when it boils.


I add the milk while the butter is melting so it can be warming up.


Next add the sugar.


Then add the cocoa. 


Stir it all together.  It's okay if there are some small lumps in the cocoa.  They will go away when it boils.

Turn up the heat to medium high so it will come to a boil.  And get your timer set for 1 minute and 30 seconds.  When it comes to a rolling boil, start the timer.


It isn't ready yet.


Now it's ready.  Turn on the timer.

When the timer goes off, take the pan off the heat.


I measure the peanut butter very accurately.  Not.  The only measurements that need to be exact are the butter and sugar.  It's really hard to mess up measuring a stick of butter.  


I always add the peanut butter first so it can melt completely before I put the oatmeal in.

Then I add the vanilla.  I just poured it in. Add the nuts here if you choose to use them.  I didn't put them in this batch.



When the peanut butter is melted, add the oatmeal and stir it all together.  

I realize that my oatmeal is measured in a measuring cup for wet ingredients.  It's just easier for me that way and I always add more oatmeal than the recipe calls for.  That's because we eat these for breakfast sometimes.  They have oatmeal so they qualify as breakfast food.  At least in my house they do.



Scoop them onto waxed paper or parchment paper and let them cool.
