Banana Nut Muffins

This morning I was trying to figure out why there were fruit flies in my kitchen when Travis spotted a super ripe banana on the counter.  What am I supposed to do? I made banana muffins.


Banana Nut Muffins
2 cups flour
1/2 cup sugar
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1 super ripe banana
1 egg
1 cup milk
3 tablespoons oil
walnuts


Heat the oven to 375 degrees.

Grease a muffin pan or line the pan with paper baking cups.  (I like to use paper baking cups but mine were missing.  I'll probably find them in Brie's cake decorating supplies.)

Mix together the flour, sugar, salt and baking powder.

In another bowl mix the super ripe banana, egg, milk, and oil.

Combine the wet and dry ingredients and stir just until they're combined.  It will still be lumpy.

Rough chop some walnuts and add it to the batter. I didn't measure the walnuts but it's probably about a cup.  The great thing about making your own food is that you don't have to be stingy with the good ingredients.  Use as much as you want. I didn't stir mine in the batter, I just put them on top before I put the muffins in the oven.  It would have been better if I stirred it in the batter.

Bake for about 20 minutes. Let them cool in the pan for a few minutes before transferring them to a cooling rack.
